Easy Campfire Skillet Eggs and Bacon Scramble

There’s something about waking up in nature, stoking a small fire, brewing up a tasty cup of coffee and whipping up a hearty breakfast to power you through the day. This easy campfire cooking recipe of skillet eggs and bacon scramble is perfect for campfire cooking and hits the spot every time.

Though you can use any kind of skillet you prefer, the cast iron skillet is my go to for campfire cooking. Campfires often have very uneven heat spots that can cause your skillet to be extra hot on one side and medium on the other. Cast iron does a better job of evenly distributing the heat when cooking over fire.

Ingredients:

  • 5 large eggs
  • Splash of milk
  • 4 slices bacon of your choice
  • 1/2 cup diced green peppers
  • 1/2 cup diced red peppers
  • 1/2 cup diced onions
  • 1 cup diced potatoes
  • Salt and pepper
  • Cooking spray
  • Tortillas (2 per person)
  • Salsa
  • Grated cheddar or Mexican cheese

Directions:

  1. Build a small fire and place your skillet 8-10” over it. Cut your bacon into 1” pieces and cook in the skillet till done. Remove the bacon and grease, leaving a thin layer of grease.
  2. Place the potatoes in the skillet and cook till starting to brown, stirring often. Add the onions and peppers and cook till tender, just a few minutes.
  3. Add the cooked bacon to the skillet along with your scrambled eggs and a splash of milk. Stir often, scraping the bottom of the skillet until eggs are cooked. Serve immediately with warm tortillas, grated cheese and salsa.
