Fredericksburg Food Fest: A Hill Country Weekend Built for Overlanders

Fredericksburgโ€™s biggest food-and-wine weekend meets the TX:GX version of a Hill Country getaway: Friday night in town, Saturday split between the Grand Tasting or a backroad-and-wheeling adventure, and a relaxed Sunday before the drive home.

There is a version of overlanding that requires 37-inch tires, a rooftop tent and enough recovery equipment to extract a small tractor.

And then thereโ€™s Texas.

Here, some of the best weekends involve a little pavement, a lot of backroad, some dirt, a legitimately difficult trail if you want oneโ€”and a very good reason to eventually park the truck and order dinner.

The Fredericksburg Food & Wine Festival, October 22โ€“25, gives us exactly that excuse. Saturdayโ€™s Grand Tasting takes over Marktplatz from 1โ€“5 p.m., with more than 75 culinary, winery, brewery and distillery pop-ups.

But this is TX:GX. Weโ€™re taking the long way.

First: This Really Is a Food & Wine Festival

Fredericksburg Food & Wine is not a single Saturday tasting. The 2026 Festival Weekend runs October 22โ€“25 across four signature events: Thursday Opening Night, Fridayโ€™s Street Dinner + Aprรจs, Saturdayโ€™s Grand Tasting and Sundayโ€™s Waterfront Brunch. The festival has been part of Fredericksburg for more than 30 years and now brings together Hill Country wineries, chefs, restaurants, brewers, distillers and makers across town.

Saturday is the centerpiece. The Grand Tasting fills Marktplatz with more than 75 culinary and beverage participants, including more than 35 wineries, plus chef demonstrations, live music, a beer garden, rosรฉ and sparkling gardens, a hog roast, lounges and a makers market. In other words, this is not an excuse we invented to drive to Fredericksburg. It is a destination event worth building a weekend around.

The TX:GX twist is that you do not have to spend the entire weekend on Main Street. Fredericksburg sits in exactly the kind of Hill Country where a good trip can move naturally between food, wine, camping, backroads andโ€”if you want itโ€”real technical wheeling.

The Weekend at a Glance

  • Friday: Fredericksburg first. Explore town and Festival Week partner events, then make the Street Dinner + Aprรจs the main event if you have tickets.
  • Saturday: Choose your adventure. Stay in Fredericksburg for the signature Grand Tasting, or make Saturday your driving/wheeling day and treat Friday as your primary festival experience.
  • Sunday: Waterfront Brunch or an easy Hill Country morning, then take the long way home.

The idea is simple: turn a Fredericksburg festival weekend into a legitimate Hill Country road trip. Route A is the stock-friendly version: Fredericksburg and Mason connected by scenic pavement, ranch roads and maintained backroads. Route B adds actual wheeling at Wolf Caves, outside Mason.

Wolf Caves is not โ€œwe found a gravel road and called it overlanding.โ€ It is a genuine Texas rock-crawling park. Its current trail information ranges from mild to very serious; the parkโ€™s newest Ianโ€™s Lone Star Gold Trail is designated a โ€œhard Yellow,โ€ rated 4+.

Friday: Fredericksburg First

If you plan to wheel on Saturday, Friday is your best opportunity to make the Food & Wine Festival the center of the trip. Get to Fredericksburg early enough to settle in and enjoy the Festival Week atmosphere before the eveningโ€™s main event.

The official Friday Street Dinner begins with cocktails at 6 p.m., followed by a seated four-course dinner paired with four wines at 7 p.m. on West Austin Street. An optional Aprรจs runs from 9โ€“10 p.m. with sparkling wine, espresso, martinis, chocolate and cheese. Regular 2026 pricing is $275 for the Street Dinner or $400 with Aprรจs. Earlier Friday options around town include the Tempra Tantrum Texas Wine Auction barrel tasting from 11 a.m.โ€“1 p.m., The Opening Pour from 4โ€“6 p.m. and other partner programming.

That creates a clean choice for the weekend: do the festival Friday and adventure Saturday, or keep Saturday open for the Grand Tasting and make the driving portion of the trip lighter. Trying to do serious Wolf Caves wheeling and properly enjoy a 1โ€“5 p.m. Grand Tasting on the same Saturday turns a good weekend into a scheduling exercise.

For the adventure-oriented version of the weekend, Mason makes an excellent first base camp. Dos Rios, less than eight miles south of Mason, sits at the confluence of the Llano and James rivers and offers tent camping, RV sites, cabins, tiny homes, Airstreams and canvas glamping tents. TX:GX has camped here before, so this recommendation has a genuine firsthand layer rather than being pulled from a booking page.

Saturday: Pick Your Adventure

Saturday is the fork in the road. If the festival is your priority, stay in Fredericksburg and give the Grand Tasting the afternoon it deserves. If the truck is calling louder, make this the adventure day and use Friday night as your primary Food & Wine experience.

Route A โ€” Hill Country Backroads

TX:GX Classification: SOFTROAD

This is the route concept for stock GXs, 4Runners, Broncos, Wranglers, Tacomas, Subarus and most reasonably capable AWD SUVs. Texas overlanding doesnโ€™t have to involve dragging a differential over granite. The goal is scenery, ranch country, cattle guards, narrow pavement and maintained gravelโ€”not obstacles for their own sake.

Choose this version if your vehicle is stock, youโ€™re traveling with family, youโ€™re new to overlanding, or you simply care more about seeing the Hill Country than testing suspension articulation. That last group may be larger than Instagram would have you believe.

And Route A has a proper Texas ending. Before heading south to camp at Dos Rios, stop at Cooperโ€™s Original Pit Bar-B-Q in Mason. The original Mason pit dates to 1953 and still cooks over mesquite coals. It turns the route into a pretty hard sequence to improve on: Fredericksburg โ†’ Hill Country backroads โ†’ dirt and gravel โ†’ Cooperโ€™s โ†’ camp on the river at Dos Rios. Cooperโ€™s currently lists Thursdayโ€“Sunday hours of 10:30 a.m.โ€“5:30 p.m. or until sold out, so build enough time into the route to reach Mason before the pits close.

Route B โ€” Wolf Caves

TX:GX Classification: TECHNICAL OFF-ROAD

Wolf Caves sits northeast of Mason and is one of the legitimate rock-crawling destinations in this part of Texas. The important word is legitimate. TX:GX learned that firsthand when our GX460 became high-centered there on what we initially thought was an easy trail.

Current normal check-in is Friday 9 a.m.โ€“10 p.m. and Saturday 8 a.m.โ€“2 p.m.; Sunday is checkout by 5 p.m. That is why this itinerary puts Wolf Caves on Saturday morning rather than Sunday. Check directly with the park before departure for current conditions and any special arrangements.

Why these and not ten more products? Because the equipment should solve a problem created by the trip. Food Fest itself does not require a shopping list; the backroads and technical wheeling do.

Armor, sliders, lockers, tire size and clearance become increasingly important as trail difficulty rises. Match the trail to the vehicle and driverโ€”not the other way around.

Saturday Option: The Grand Tasting

Whether you spent the morning wandering Hill Country roads or crawling granite, both versions eventually point toward Fredericksburg. And now the driving portion of the day is over.

The Grand Tasting runs Saturday, October 24, from 1โ€“5 p.m. at Marktplatz, 126 W. Main Street; VIP entry begins at noon. Regular 2026 pricing is $150 general admission, $125 local and $295 VIP. The event is 21+ and includes more than 75 culinary, winery, brewery and distillery pop-ups, plus live music and demonstrations.

The TX:GX rule for Saturday afternoon: once the tasting begins, the truck stays parked. Walk, use a designated sober driver or arrange transportation.

Sunday: Donโ€™t Ruin a Good Weekend

This is where we originally considered putting Wolf Caves. We donโ€™t recommend it. The parkโ€™s normal Sunday operation is checkout rather than normal new arrival, so Sunday is better used to sleep in, make coffee, break camp and explore Fredericksburg before heading home.

The festivalโ€™s Sunday Waterfront Brunch runs 10 a.m.โ€“noon at Fischer & Wieser Farmstead at Das Peach Haus. Or skip another ticketed event entirely and take the long way home. There is no trophy for turning every available hour into an activity.

TX:GX Route Classifications

ROAD TRIP โ€” Primarily paved; the destination and journey matter more than road difficulty.

SOFTROAD โ€” Pavement mixed with maintained gravel/dirt and mild rough-road conditions; generally suitable for stock SUVs and many AWD vehicles when conditions are good.

OVERLAND โ€” Longer-distance mixed-surface travel where rough roads, remoteness, camping, navigation and self-sufficiency become meaningful parts of the trip.

TECHNICAL OFF-ROAD โ€” Obstacles and terrain are themselves part of the objective; vehicle capability, driver experience, recovery equipment and trail selection matter considerably.

Route conditions can change quickly due to weather, maintenance, closures and use. These classifications are a guide, not a guarantee of difficulty or safety. Drivers are responsible for evaluating current conditions, their vehicle, equipment, experience and personal capabilities before proceeding.

Respect private property. Stay on legal public roads and designated trails. A GPS track is never evidence that a road is legally open.

The Bigger Idea

The reason this weekend works isnโ€™t because the Fredericksburg Food & Wine Festival happens to be near some dirt roads. It works because it illustrates something TX:GX has believed for years: overlanding isnโ€™t a contest to see who can find the worst road.

Itโ€™s a way of traveling. The truck gets you somewhere interesting. The backroads make getting there part of the experience. Camping connects you to the place. Technical wheeling is available when you want it.

And eventually you get out of the truck. You eat something. You meet somebody. You explore a town. You make a memory that has absolutely nothing to do with approach angle.

For one October weekend, Fredericksburg and Mason give us all of it.
